What is the point in backing more than 1 number? 1 ball 1 slot 1 winner.
Backing more than 1 number eats in to the BR.
If I back 1 number I've got 36 spins to win flat betting.

Maybe we need to repeat things over and over for things to sink in, there is nothing wrong but it is more expensive. Swings are more important on numbers than on even chances. You need to bet at least 26 spins to get the equivalent of a 50/50 bet on single number. Make the count 26 spins = 26 units. But it's not all, fluctuation on any single number may be more prononced than on any other type of bets.

It is done to alter the dynamics of the game.
The win/loss dynamics experienced on 1 number, is experienced twice as fast at the 2-number split level, thrice as fast at the 3-number street level, six times as fast at the 6-number group level and so on.

A matter of personal taste.

Also, it has to do with dispersion of hits. The more numbers covered, the less expected dispersion between hits.

Something on your favor; by covering one number there is the most volatility. Which means covering 1 number has the huge advantage of giving room to the most positive deviations from the norm. This is the perfect choice for people who want to have a shot at turning the least money into the most wins.

That is a matter of actually wanting to flat bet 36 spins.

Some people do prefer flat betting only 3 spins at the dozen/column level.

All bets in roulette are equal, so one number betting is equal to any other choice.

I played # 6 on every spin today.  Ended up over 600 units.
Sometimes pays to play a system for breaking even and a separate number or two for the profit.

Why # 6?  Because of Patrick McGoohan's death a few days ago.
