Is it possible to detirmine ball rotating speed from sound pitch/frequency?

Yes, but it's not always easy to do in a loud casino.

Edit: Using a mic is not really practical with the amount of white noise on the floor. There are easier and more practical ways to determine ball speed effectively. I suggest you do some digging into some VB threads.
